In the composer, select an X, LinkedIn or Mastodon channel and open its tab.

Turn on Add a poll.

Type the Options (select Add option for more) and pick a Poll length.

Schedule the post.

Facebook and Instagram don’t allow polls through their APIs. Use a reminder and add the poll in their app.
